Coffee cupcake with coffee glaze

 After eating a ton of turkey and baking my first apple pie from scratch, I thought I was done. Then my family starting talking about how good a coffee cupcake would be. So of course I had to bake some the wkend after.
 Some yummy first try! So I have found that my oven cooks too hot. I have ajusted my temps and cooking times. 325 and for 12 mins. I got this book from Las Vegas and I tried their Coffee cupcake with coffee glaze. The texture in the cupcake was a little dry. I think it has to do with the recipe asking for cake flour and me not having any. I did found out that you can substiute to make 2 cups of cake flour.
 This is the first time I tried making a glaze. Its basically powdered sugar and coffee for this recipe. Then you have to get it to the right constincy. Its going to be a bit watery but hardens with a nice shine to it. So I had some of the same coffee that I used in the recipe and it enhanced the flavor of the cupcake. I also tried hot chocolate with it and that was a really good combo. Definatly going to bake again! Until next time, happy baking!

what a flop!!

 So I just moved and what a time to make my own cupcakes. I just burnt 36 cupcakes!!They were in for 10 mins, it cooks way too fast. I was sooo mad, still kinda am. Will have to try soon!!

My -b-day!!

 Yes, I know, I haven't written in months, but I got a new job and looked for a new place ans moved. I've been quite busy. But now focused once again on baking for all.
 But this weekend is my 30th Birthday! SO exciting!! I have thought of 2 great cakes, one is Oreo cookie cupcake and the other is Chocolate Chip cookie cupcake. I know these have been done, but I will make them my own. The Oreo will have the Oreo cookie crust with a vanilla cake and a chocolate cream cheese frosting and a cookie to ganish. Chocolate Chip, will have a cookie crust with a chocolate chip vanilla cake with cream cheese frosting and a cookie ganish. I hope they turn out well! Till next time happy baking!!

Bake sale plus great news!

So my school was having a bake sale and I decided to do chocolate peanut butter cream cheese frosting on a banana cupcake. Good raves! One said that they were one of the best one I've baked. I used 3 bananas instead of two and the other interesting thing that was added was sour cream. I think these two thing made the cake really moist.

I have some great exciting news! One of the local restuarents wanted to meet and talk cupcakes! I'm going to call tomorrow and be very nervious. This all started by me putting an ad on craigs list to promote my cupcakes. Hopefully the interest keep coming! Well, until next time, happy baking!

Chocolate chip mint cupcake bust

So I made these chocolate chip mint cupcakes for my firneds 30th b-day. they didn't turn out they way I wanted them to. I used the reseipe from Cupake Wars on the food chanel. It wasn't a chocolate cake but thought since it asked for fresh mint it would be good. I made the cake and it said 25 mins. to cook..so i always cook for less, so I did 22 minutes first thing I notices is they are over cooked! After cooling they are already hard! Then to the frosting... tasted too much like butter I won't use a certain kind any more! I didnt use enough mint leaves, it said sprigs. So off  to the store to get mint extract. a teaspoon of that and it worked! Overall, the mint buttercream frosting made up a bit for the dry cupcake. This is a defient redo!! Mexican Hot Chocolate cupcake

So it's been a while. last month I tried to make a chocolate spice cake with a cinimon buttercream frosting..the cake was really good but man the frosting did NOT work out. it was soo weird how it turned out I can't even  expalin it. My friend didn't like it, said it taste too much like butter, but after  putting LOTS of cinnimon in it..i liked it. My other firend who tried it really liked. The frosting is defiently a redo.  I also want to use actual mexican choclate next time. It has a slightly different taste to it.  Overall I think it was a success!
 This friday I will be making a choclate mint cupcake for a friends 30th b-day! I'm really excited. I've never planned a party before so hopefully all turns out well..lol! Unitl next time have a great trip!
